Heat the oil and fry the onion, chillies and garlic 2-3 minutes.

Spoon the pumpkin through and cook gently for 8-10 minutes.

Meanwhile, cook the pasta al dente.

Drain and collect some of the cooking liquid.

Spoon the pasta with 2-3 tablespoons of cooking liquid and half of the parsley through the pumpkin mixture.

Season with salt and pepper.

Spread over deep plates with a scoop of ricotta and the rest of the parsley on it.
