Heat the oil in a large frying pan and fry the gnocchi in 15 minutes until golden brown and crispy.

Meanwhile, put the grilled vegetables in a pan. Add the tomato sauce to the vegetables and heat for 10 minutes on low heat.

Drain the mozzarella, cut into cubes and add to the sauce. Heat for 2 minutes.

Spoon the arugula through the gnocchi and serve with the sauce.
