Heat the oil in a soup pot and fry the shallot in it. Add the bacon and sage leaves, keep a little sage separately to garnish, and cook for 1 minute.

Add the peas and stock and cook until cooked for about 5 minutes.

Remove the pan from the heat source and puree the soup with a hand blender. Season with salt and pepper.

Serve the soup with a spoon of crème fraîche and garnish with some sage.
