Salad with broad beans
A tasty recipe. The vegetarian starter contains the following ingredients: coarse mustard, white wine vinegar, olive oil, broad beans (300 g, frozen), cucumber, green pepper, spring onions, celery, rocket (lettuce and 75 g).

Make a dressing of mustard, vinegar and oil.

Cook the green beans according to the instructions on the packaging, pour them off and let them cool down.

Scrape the cucumber lengthwise into thin slices and then cut the slices into thin ribbons.

Keep a section separate for garnishing.

Cut the peppers into small cubes.

Cut the spring onion and celery into thin slices.
-
Mix all vegetables with the dressing and let stand for 30 minutes.

Spoon the arugula at the last moment and garnish with the cucumber ribbons.

Serve immediately.
