Peach soup with mint
A tasty Dutch recipe. The vegetarian starter contains the following ingredients: peaches, limes (cleaned), fresh mint (15 g), white port (bottle 0.75 liter) and crème fraîche (125 ml cup).
Halve the peaches. Remove the kernel and cut the flesh into pieces. Grate the green skin of the limes and press the fruit. Leave 1 sprig of fresh mint and do the rest of the mint, only the leaves, with the peach, juice, grater and port in the blender and grind in 10 sec. to a smooth soup.
Divide the soup over 4 glasses, scoop 1 tbsp crème fraiche in each glass and garnish with a mint leaf.
