Preheat the oven to 200 ° C. Place the puff pastry pieces 1 cm overlapping side by side on the baking tray. Press the seams firmly together. Prick the dough floor here and there with a fork.

Crumble the goat cheese above the dough but leave the outside edges free. Mix the pear slices with lemon juice, ginger, freshly ground black pepper and honey. Divide them in a layer over the dough floor in a single layer.

Leave the dough edges free and roll them up a little. Brush them with egg. Bake the cake in the middle of the oven in 20-25 minutes until golden brown.
