Bring 250 ml water in a pan with the red wine to the boil. Peel approx. 10 cm from the lemon peel (only the yellow). Place the cinnamon stick, lemon zest, grated ginger, cloves and sugar in the pan. Add the pears, reduce the heat source and simmer them for approx. 45 minutes.

Scoop the pears from the pan into a bowl. Cover them with aluminum foil to keep them warm.

Strain the cooking liquid. Bring the sieved liquid back to the boil and boil it until it looks like syrup. If necessary, season with some extra sugar. Spoon the syrup over the pears.
