Peppers and peppers with lemon

Preheat the oven to 200ºC.

Place the pieces of paprika on the baking sheet. Sprinkle with salt and drizzle with a little of the olive oil.

Roast the peppers high in the oven in about 10 minutes. Add the peppers and roast for another 10 minutes.

Allow to cool completely and scoop them in lockable glass jars. Add the lemon zest and juice and fill with the olive oil until the pepper is under.

Keep the pots air-tight in the refrigerator. The contents stay in the fridge for up to 1 week.
