Chestnut mushrooms with red pepper, spring onions, red chicory in fried Oriental stir-fry oil

Directions

  1. Wash pepper, clean and cut into strips. Clean the spring onions and cut into narrow strips. Cut white from spring onions small and cut green into long, narrow strips. Wipe mushrooms with kitchen paper and cut into quarters.
  2. Heat oil with pepper gently in frying pan. Add mushrooms and fry for approx. 2 minutes on low heat. Remove from heat and scoop small pieces of spring onions and lemon juice with mushrooms.
  3. Season with salt. Put two leaves of red leaf on each other on four plates and put mushrooms in it. Garnish with strips of spring onion.
