Cut the plum halves into pieces and set with 50 grams of sugar, vanilla sugar and the cinnamon stick. Bring to the boil, stir well and leave to simmer for about 10 minutes at a low setting.

Allow to cool, remove the cinnamon stick and scoop the compote into 4 glasses. Let it cool completely in the refrigerator.

Beat the whipped cream with 2 tablespoons of sugar before serving and pour a generous cream on the compote. If necessary, garnish with a mint leaf.
