Pork fillet steak with apple salsa

Grate the orange.
-
Chop the silver onions and the basil finely.

Cut the apples into quarters, remove the cores and peel the parts.

Cut the parts into small blocks.

Mix them in a bowl with orange zest, pinch of mustard, silver onions, capers, basil and some salt and freshly ground black pepper to form a salsa.

Leave the salsa for 20 minutes.

Rub the pork fillets with salt, pepper and mustard.

Heat the butter in a frying pan.
-
Fry the pork fillets on moderately high.
-
fire 10-12 minutes nicely brown and cooked, turn them regularly.

Keep them warm on a plate under aluminum foil.

Pour the vinegar and apple juice into the shortening and stir the cakes.

Boil everything on a high heat to a lightly bound gravy.

If necessary, season with salt and pepper.

Place the pork fillets on hot plates and spoon the gravy over them.

Spoon the apple salsa in small glasses and put them on the plates.
