Pork fillet with pancetta and apple


A tasty recipe. The main course contains the following ingredients: meat, pork fillet (1 piece), dried sage, firm apples (peeled and chopped), pancetta (Italian bacon), butter, oil, calvados ((liquorice), heated), poultry (380 ml) ), fresh thyme leaves (dish a 15 g), potatoes (steady, in parts) and garlic (in the peel).

Directions

  1. Preheat the oven to 200 ° C.
  2. Cut the pork fillet (at 1 cm) on the side with a knife.
  3. Unfold the fillet and sprinkle with sage, salt and pepper inside.
  4. Divide half of the apple into the fillet.
  5. Fold the filet double, cover it with the pancetta and tie it with a kitchen string.
  6. Heat 1 tbsp butter and 1 tbsp oil in a frying pan and brown the roulade.
  7. Flambé the meat with the calvados, see tip.
  8. Add the fondue and the thyme.
  9. Remove the roulade from the pan and put it in an oven dish.
  10. Spoon the potatoes, the rest of the apple and garlic with 3 tbsp oil and salt and pepper to taste.
  11. Arrange the mixture around the pork fillet in the oven dish.
  12. Roast the whole in the middle of the oven in 45 minutes until tender and brown.
  13. Let the sauce reduce to about 100 ml and stir in the rest of the butter; serve the sauce with the meat.
