Pork tenderloin with grilled sweet potato and mango salsa

Directions

  1. Preheat the oven to 200ºC. Cut the potatoes into slices of about 1.5 cm thick.
  2. Place on the baking sheet and brush with half of the olive oil. Sprinkle with paprika and salt. Turn the slices over and brush and sprinkle this side with oil and paprika.
  3. Bake the potato slices in the oven for about 20 minutes. Turn around halfway.
  4. In the meantime cut the pork tenderloins into slices of approx. 1.5 cm thick. Heat the butter in a large frying pan and fry the pork tenderloin in about 5 minutes until tender and lightly rosé. Turn halfway.
  5. Sprinkle the pork tenderloin with salt and pepper. Divide the lamb's lettuce over 4 plates.
  6. Place a slice of pork tenderloin and a slice of potato on top of the lamb's lettuce. Spoon some of the mango salsa on it.
