Directions

  1. Preheat the oven to 200ºC.
  2. Heat the oil and fry the potato slices lightly brown. Cut the mushrooms into slices. Fry the mushrooms with the half of the spring onions for 2-3 minutes with the potatoes.
  3. Beat the eggs with the cream, curry, salt and pepper. Pour this mixture over the potatoes and mushrooms in the frying pan.
  4. Sprinkle with the cheese and put in the oven for about 20 minutes until the egg mixture has solidified and the cheese is golden brown. Sprinkle with the rest of the spring onion.
