For the dressing, grate the peel of 1/2 orange and squeeze out the whole fruit.

Mix the orange zest, juice, horseradish and oil and season with pepper.

Spoon the chicory strips and mix and spread over 4 plates.

Halve the wedges of grapefruit if necessary. Place the grapefruit on the salad and spread the salmon over it. Drizzle with the dressing and sprinkle with the capers.
