Directions

  1. For the dressing, grate the peel of 1/2 orange and squeeze out the whole fruit.
  2. Mix the orange zest, juice, horseradish and oil and season with pepper.
  3. Spoon the chicory strips and mix and spread over 4 plates.
  4. Halve the wedges of grapefruit if necessary. Place the grapefruit on the salad and spread the salmon over it. Drizzle with the dressing and sprinkle with the capers.
