Potato salad with dutch prawns
A tasty Dutch recipe. The side dish contains the following ingredients: fish, crumbly potatoes ((Malta), peeled and diced), lemon (scrubbed), crème fraîche, mayonnaise (with yoghurt (pot 350 ml)), fresh chives ((bag of 25 g) , chopped) and Dutch shrimps (peeled).

Cook the potato cubes in a little water with salt in 15-20 minutes until done.

Drain and rinse them briefly cold to stop the yarn.

Grate the zest of the lemon and squeeze the fruit.

Mix the crème fraîche with the mayo, the chives, 2 tablespoons of lemon juice, the lemon zest and salt and (freshly ground) pepper to taste.

In a bowl, spoon the potato cubes with the shrimps through the lemon-chive dressing.

Delicious with a piece of roasted meat from the barbecue or as a lunch dish with thick slices of solid brown bread and a mixed salad..
