Boil the potatoes, drain them and let them cool slightly.

Mix the ingredients for the dressing.

Mix the lukewarm potatoes lightly with salt, pepper, onion, half of the parsley, cucumber and capers. Scoop the dressing through.

Divide the arugula over a dish or plates. Then create the potato salad. Divide the ham strips over it and sprinkle the salad with the rest of the parsley.
