Potato salad with tuna, red onion, green beans and olives.

Peel the potatoes and cut into pieces. Boil the potatoes in a little water with salt in 15-20 min. Until done.

Drain the potatoes and let them cool to room temperature. Boil the green beans in a bowl of water with salt in 5-6 minutes. Crispy cooked.

Drain the green beans and rinse under cold running water. Cut the onion into fine rings and let the tuna drain. Slice the parsley.

Mix the potatoes with the onion, tuna, olives, salad dressing and the parsley. Season the potato salad with (freshly ground) salt and pepper.

Divide the arugula over plates and spoon the potato salad.
