Directions

  1. Mix the cumin and paprika powder with 4 tablespoons of barbecue sauce. Place the chicken in it and leave to marinate in the fridge for at least 1 hour.
  2. Preheat the oven to 200ºC.
  3. Place the chicken with the marinade in an oven dish, pour in the stock and put in the oven for about 1.5 hours. Baste from time to time with some frying fat to prevent dehydration.
  4. Remove the chicken from the oven, remove the bones and pull the meat apart with 2 forks.
  5. Mix the roasting liquid with the rest of the barbecue sauce, pour it into a saucepan and briefly reduce to a high sauce. Stir some of the sauce through the chicken.
  6. Serve the pulled chicken on a tortilla wrap with cucumber, avocado, spring onions, arugula and extra barbecue sauce.
