Directions

  1. Preheat the oven to 200ºC.
  2. Divide the pumpkin over the baking sheet. Sprinkle with 2 tablespoons of oil, salt and pepper and bake for about 25 minutes in the oven.
  3. Meanwhile, cook the potatoes until done. Drain and keep a cup of the cooking liquid.
  4. Stamp the potatoes to a fine mash and mix in the rest of the oil, roasted pumpkin, spinach, sundried tomatoes and half of the goat's cheese. Add some cooking liquid to make the stew extra smooth. Season with salt and pepper.
  5. Spoon the stew into 4 bowls, crumble the rest of the goat's cheese and sprinkle with the pumpkin seeds.
