Ratatouille with pumpkin from the oven
Preheat the oven to 200 ° C. Mix all vegetables in a large bowl and pour the oil through. Season with (coarse) salt and pepper.
Spread over the baking sheet and roast high in the oven for about 20 minutes until the vegetables are a little colored, but still firm. Put the baking sheet lower in the oven if the vegetables discolour too quickly. Scoop occasionally while roasting.
Drizzle the vegetables for serving with some lemon juice and garnish with fresh green herbs, such as oregano and thyme.
