Beat the oil, mustard, vinegar, (freshly ground) pepper and possibly salt to a dressing. Cut the celery coarsely.

Heat a frying pan without oil or butter and toast the walnuts for 3 min. On medium heat. Remove from the pan and allow to cool on a plate.

Meanwhile, peel the kohlrabi and the winter carrot. Cut the vegetables and the apple into thin strips (julienne). Put in a large bowl.

Mix in the dressing, celery and walnuts and serve.
