Boil the water.

Put the couscous in a large bowl and add the turmeric, cumin and the paprika. Add salt to taste and mix.

Pour the water over the couscous and leave for 10 minutes. Stir the couscous with a fork.

Cut the red onion very finely and the red pepper into small cubes.

Add the onion, peppers and capers. Slice the mint leaves and parsley very finely, add and mix. Spoon the half to gently.

Grate the yellow skin of the lemon over the couscous and squeeze out the fruit. Add the oil, lemon juice and pepper and salt to taste.

Serve lukewarm or cold.
