Beat the olive oil, white wine vinegar, mustard, pepper and salt, if necessary, into a dressing. Cut the cheese into cubes of 1/2 cm.

Halve the grapes. Chop the walnuts coarsely. Mix the cheese with the grapes, walnuts and arugula.

Put the dressing through and serve.
