Potato-nut cookies with chives
A tasty Dutch recipe. The vegetarian side dish contains the following ingredients: crumbly boiling potatoes, salt, unsalted cashew nuts, egg, fresh chives, pepper, flour, breadcrumbs and oil for frying.

Cook in boiling water with salted potatoes for about 20 minutes. Cashew nuts coarsely chop. Drain potatoes and crush. Split 1 egg over two bowls. Cut chives finely. Fry the nuts, chives and egg yolk with puree. Add salt and pepper. Peel the puree into a deep plate and leave to cool for approx. 30 minutes. Forming 12 cookies from puree. Protein the egg whites in deep plate, each flour and breadcrumbs on the plate. Potato-nut cookies first wallow through flour, shake off excess flour, then through protein and then roll through breadcrumbs. Place cookies in the refrigerator until use.

Heat oil in fryer. Potato-nut cookies in 2 to 3 minutes until golden brown. Serve immediately. Delicious with grilled chicken or schnitzels and beans or lettuce.
