Preheat the oven to 200 ºC. Cut the courgettes in the width around the cm, but do not cut through.

Place the courgettes on a baking sheet covered with parchment paper. Drizzle with oil and sprinkle with the herbs.

Fry the courgettes for 15 minutes in the middle of the oven until done.

Meanwhile, cut the feta lengthwise and then into slices of ½ cm. Sprinkle with the Mediterranean herbs.

Fry the hasselbacks for another 10 minutes until the cheese turns color. Take the courgettes out of the oven and spread the leaves of fresh mint over them. Serve immediately.
