Scrape the coals into wafer thin strips with a mandolin or in a food processor.

Do this with the onion and mix in a large bowl with the apple and mint.

Beat for the dressing the garlic with the cumin, vinegar and honey and add the oil in a stream. Season with salt and pepper and spoon this dressing through the salad.

Leave at least 30 minutes and shovel the red cabbage salad a few times in between.
