Directions

  1. Melt butter in a soup pot. Add the oil. Fry the onion rings soft and glassy.
  2. Add the pieces of red pepper and garlic and fry everything, always stirring, for 8 minutes.
  3. Then pour the stock in the pan and bring to the boil. Put the lid on the pan and let the vegetables cook gently on a fairly low heat for about 15 minutes.
  4. Purée the soup using a hand blender or other food processor. Stir in the paprika powder and season with salt.
  5. Spoon the soup into deep plates or bowls. Divide the green pepper pieces over the soup.
