Directions

  1. Bake the potatoes in 3 tablespoons of oil. Preheat a grill pan or switch on the oven grill.
  2. Brush the pork chops with oil, sprinkle with salt and season with pepper. Grill the meat on each side for 3-4 minutes until it is light brown and done. Remove the pork chops from the pan and keep them warm.
  3. Meanwhile, cook the apple slices with rosemary, honey and ginger in 2 tablespoons of water for 8 minutes.
  4. Mix the garlic, mustard and sherry and season with salt and pepper.
  5. Serve the pork chops with the apple-rosemary sauce, the baked potatoes and a green salad or peas.
