Bake the potatoes in 3 tablespoons of oil. Preheat a grill pan or switch on the oven grill.

Brush the pork chops with oil, sprinkle with salt and season with pepper. Grill the meat on each side for 3-4 minutes until it is light brown and done. Remove the pork chops from the pan and keep them warm.

Meanwhile, cook the apple slices with rosemary, honey and ginger in 2 tablespoons of water for 8 minutes.

Mix the garlic, mustard and sherry and season with salt and pepper.

Serve the pork chops with the apple-rosemary sauce, the baked potatoes and a green salad or peas.
