Directions

  1. Mix the ricotta with the milk, egg yolks and lemon zest into a smooth mixture. Beat the egg whites stiffly in a fat-free bowl.
  2. Mix the flour, the baking powder and a pinch of salt through the ricotta mixture. Spatulate the protein lightly.
  3. Heat a little oil in a gourmet pan and spoon in a spoonful of batter. Turn the pancakes over when bubbles appear on the edge.
  4. Heat the cherries in a different pan or serve them cold. Put the pancakes on plates, scoop some cherries and sprinkle with icing sugar.
