Directions

  1. Heat the butter in a frying pan and fry the red onions with a pinch of salt for about 5 minutes.
  2. Add the vinegar and cook for about 20 minutes at a low setting until the onions are soft and dark. Change regularly.
  3. Spoon the caramelised onion in a bowl and let cool for about 30 minutes.
  4. Fold the slices of roast beef as a rose and place the florets on an amuse spoon or small plate.
  5. Spoon some caramelized onion in the middle and finish with a scoop of horseradish.
