Roasted salmon with salsa verde

Brush the fish with oil and sprinkle with salt and pepper.

Puree for the salsa verde the garlic, green herbs, capers, anchovies and mustard and pour the olive oil in a stream until a thick sauce is created. Add lemon juice, grated rind and freshly ground pepper.

Roast the salmon in a hot grill or frying pan for 2-3 minutes per side.

Serve with the salsa verde. Tasty with fried potatoes and snow peas, sugarsnaps or carrot.
