Rösti with sauerkraut
A tasty recipe. The vegetarian main course contains the following ingredients: eggs, bluefin cheese (eg Danish blue), rösti (frozen), butter, oyster mushrooms, vortexed apricots, herb sauerkraut ((450 g), drained) and parsley (finely chopped).

Dissolve eggs with salt and pepper in bowl.

Grind cheese on top and freeze rösti by egg.

Fry 2 tablespoons of butter in frying pan, distribute rosti over the bottom and press down slightly.

Place the lid on the pan and cook for 7 minutes.

Using the flat plate rösti and another side also 7 minutes.

In the meantime cut oyster mushrooms and apricots into strips.

Heat 2 tablespoons of butter and stir-fry mushrooms for 2 minutes.

Bring apricots and sauerkraut through and heat for another 5 minutes.

Cut the röstikoek into points and serve with sauerkraut.

Sprinkle with parsley..
