Directions

  1. Sprinkle the eggplant slices with salt, leave on kitchen paper for about 30 minutes, and pat dry.
  2. Brush all the vegetables with oil and grill them in a hot grill pan on both sides until golden brown.
  3. Drain everything on kitchen paper, sprinkle with pepper and leave to cool until lukewarm.
  4. Prak pieces of softened gorgonzola with cream cheese or ricotta to a smooth mixture.
  5. Mix in the walnuts and parsley. Spread over the grilled vegetable slices, roll up and put a stick through.
