Cross the tomatoes, put them in hot water for a few seconds, peel them and cut them into pieces.

Sprinkle the meat with salt and bake it in brown in the butter for 5 minutes. Add a dash of broth and roast the roulade with the lid for 30 minutes.

Meanwhile, heat the oil, fry the onion and garlic and add thyme and tomatoes.

Bake for 5 minutes and add the mixture with the rest of the stock at the roulade.
