Salad of grilled vegetables with mozzarella


A tasty Italian recipe. The vegetarian side dish contains the following ingredients: (olive) oil and fresh chive pesto (tray).

Directions

  1. Preheat the grill to the highest setting.
  2. Cut the zucchini into slices of about 1 cm, the peppers into pieces of about 3 cm and the onion in rings.
  3. Drizzle the vegetables with the oil sprinkle with salt and pepper.
  4. Put the griddle under the hot grill and roast the vegetables in 6-8 minutes nicely browned and al dente. Spoon halfway.
  5. Repeat with the remaining vegetables.
  6. Drain the mozzarella on kitchen paper and cut into cubes.
  7. Transfer the grilled vegetables to a bowl and pour in the chives pesto and mozzarella. Serve lukewarm or cold.
