Bring a pot of water and salt to the boil. Cut the thick stems of the mushrooms and cut the caps into thin slices.

Blanch the mushroom slices by placing them in the boiling water for about 1 minute and then rinse them with cold water.

Beat the ingredients for the dressing well together and scoop them together with the chives and parsley through the mushrooms. Leave for half an hour.

Bring the salad further to taste with salt and pepper and sprinkle last with the basil.
