Salmon biscuits with mustard mayonnaise

Mix the salmon with the shallots, celery, spring onions, half of the crumbs, the egg, the crème fraîche and the flour. Season with salt and pepper.

Shape 8 balls and press them flat. Pull through the rest of the bread crumbs and press it a little.

Put the cookies in the fridge for a little while so that they become slightly firmer.

Meanwhile, make the mustard mayonnaise. In a food processor or with a hand blender, whisk together the egg yolk, mustard, lemon juice and rack.

Pour the sunflower oil in a thin stream while throbbing until the mayonnaise is thick enough.

Heat a layer of olive oil in a frying pan and fry the salmon cookies 2-3 minutes per side.

Drain them on kitchen paper and serve with the mustard mayonnaise.
