Preheat the oven to 180 degrees Celsius.

Puree nuts, rusks, lemon zest, garlic and parsley in the food processor until everything is chopped into small pieces.

Place the salmon fillets on a sheet of baking paper on a baking tray.

Divide the nut mixture over the fillets and fry in 9 minutes.

Meanwhile, clean the fennel tubers and cut them into thin slices.

Roast the slices in olive oil in a frying pan or grill pan.

Serve the salmon fillets with the roasted fennel slices.
