Salmon rolls with lime ricotta
Rolls of smoked salmon with lime ricotta and basil.

Clean the lime, grate the green skin off and squeeze out the lime.

Mix the ricotta through the lime zest and season with salt and pepper.

Spread a piece of foil on a work surface. Place the salmon slices in a rectangle of approx. 20 x 16 cm.

Sprinkle the lime juice over it and carefully brush the salmon with a thin layer of lime ricotta.

Cover it with the leaves of the basil. Roll up the salmon from the long side using the foil.

Wrap the salmon roll in the foil and allow to set in the refrigerator for about 1 hour.

Remove the foil and cut the salmon roll into slices of about 1 cm thick with a sharp knife. Serve in dishes.
