Directions

  1. In a bowl the couscous in the boiling water about 5 minutes. Peel the orange thick and cut the flesh into pieces. Slice the rucola coarsely.
  2. Mix the lemon juice and oil through the couscous. Also pour in the orange, rocket and pine nuts. Season with salt and pepper.
  3. Sprinkle the salmon with salt and pepper. Heat the oil in a frying pan and fry the salmon just 2-3 minutes per side.
  4. Spoon the couscous into a bowl and place the salmon on it.
