Directions

  1. Make sure that the meat for the carpaccio is at room temperature.
  2. Divide the carpaccio over the sandwich.
  3. Drizzle some extra virgin olive oil or Worcestershire sauce over it and sprinkle the carpaccio with a handful of roasted pine nuts and Parmesan chips.
  4. Then a pinch of pepper and salt to taste.
  5. Make the arugula with a little olive oil and some pepper and salt and put a tuft in the middle of the carpaccio.
