Directions

  1. Bring the water to the boil with the salt in a pan. Halve the chicken fillets in the length. Poach the chicken in 10 minutes until done. Keep the water against the boil.
  2. Slice the leaves of the celery. Let the coleslaw drain. Mix with the carrot, red cabbage, celery and mayonnaise and season with pepper.
  3. Put the chicken fillets on a plate and with 2 forks, pull the meat apart into tufts and mix with the barbecue sauce.
  4. Cut the ciabatta through and fill the bottom half with half of the coleslaw.
  5. Divide the chicken over it and garnish with a little sauce. Cover with the top of the bread. Place on a large cutting board and cut into pieces.
  6. Serve the rest of the coleslaw separately.
