Heat the oil and fry the onions in about 5 minutes soft and light brown.

Add the rosemary, spices and apple cubes and briefly spoon over. Leave to simmer for about 10 minutes with the lid on the pan.

Scoop the mashed potatoes into a bowl and allow to cool. Remove the cloves and bay leaf.

Scoop the cranberries through and season the compote with salt, freshly ground pepper and balsamic vinegar.
