Preheat the oven to 180ºC. Roast the almond shavings in a dry, hot frying pan.

Mix the almonds, semolina, flour, baking powder, vanilla sugar, sugar and lemon zest in a bowl. Beat the buttermilk, oil and eggs with a pinch of salt and scoop through the dry ingredients. Do not mix too well for an airy result.

Lastly, scoop the forest fruits in a few strokes through the batter and spread over the cake molds. Put in the muffin mold and fry the muffins in the oven for about 20 minutes. Allow to cool down as desired.

Eat the muffins cold or warm them up in the oven.
