Semolina pudding with berry juice


A tasty Spanish recipe. The vegetarian dessert contains the following ingredients: lemon, whole milk, salt, semolina (pack à 500 g), sugar, cinnamon stick, redcurrant juice (250 ml) and potato starch.

Directions

  1. Clean the lemon thoroughly and cut off 1 piece of peel of approx. 4 cm (without white). Rest of zest grating. Bring milk with lemon zest and pinch of salt to the boil and let it cook for about 5 minutes on low heat. Mix semolina and 75 g sugar and add to boiling milk. Let the mixture boil for approx. 7 minutes with occasional stirring. Clean the inside of the pudding mold with cold water. Pudding into mold. Allow the pudding to cool and allow to set. In the meantime, boil water, cinnamon stick and lemon zest in the pan 1 dl. Add the berry juice and the rest of the sugar and bring to the boil. Stir in a cup of potato starch with 5 tablespoons of water to a smooth paste. Roll the paper through the berry juice and let it bind with stirring. Take the lemon peel and cinnamon stick out of sauce and let the sauce cool down.
  2. Keep the pudding form briefly in warm water. With fingers loosen top of pudding along edge. Place dish on shape, turn together, shake briefly and let pudding slide out of shape. Give it a sauce.
