Boil the peas in a bottom of water with salt in 2 min. Until done. Purée the peas with the crème fraîche and 3 leaves of fresh mint to a smooth mass. Season with pepper and salt.

Cut the fish into strips. Place a spoonful of pea mousse on each spoon and spread the fish strips over it. Cut the rest of the fresh mint into wafer-thin strips and sprinkle over the fish.
