Preheat the oven to 190ºC.

Cut off the lids from the pie shells and keep separate. Place the trays on a griddle or baking tray and heat in the middle of the oven for about 6 minutes.

Heat the oil in a stirring rack in the almonds. Remove them from the wok.

Stir fry the vegetables with the curry paste for 2-3 minutes. Fry the mango for 1 minute.

Put in the ginger shavings, soy sauce, half of the coriander, coconut milk and almonds and heat.

Fill the pie shells with this mixture and sprinkle with the coriander. Put the lids on top, garnish with lime wedges and serve immediately.
