Leave ice to freeze outside deep frozen approx. 30 minutes in advance.

Break 4 speculaas over ice cream. Add spice herbs and mix thoroughly. Freeze ice in freezer in about 1 hour.

Take ice from frozen. In refractory bowl mix 1 tablespoon of bokbier, sugar, egg yolks. Place in a pan with a layer of boiling water and whisk together mass (au bain-marie) continuously for approx. 8 minutes. Slowly beat the rest of bokbier.

Scoop 6 round bread rolls ice cream onto six plates. Crumble last two speculaas above it. Spoon sabayon around it and serve immediately.
