Speculaas pie with apricots
A tasty Dutch recipe. The vegetarian pastry contains the following ingredients: flour, dark caster sugar, gingerbread (or biscuit spices), cold butter (in small pieces), almond paste, crème fraîche, egg, vortexed apricots and almond shavings (45 g).

Mix in a bowl the flour with the sugar, spiced spices, a pinch of salt and the pieces of butter mixed together. Knead everything with cool hands quickly into a coherent roll of dough (or mix it with the pulse button in the food processor). Wrap the dough in plastic wrap and leave it in the fridge for at least 30 minutes.

Preheat the oven to 175 ° C. Roll out the dough on a floured countertop to a thin piece with a diameter of 30 cm; upholstered the greased form.

In a bowl, separate the almond paste with a fork and mix in the crème fraiche and the egg. Spread this mixture over the cake base. Cover with a layer of apricots and finally sprinkle the sliced almonds over. Slide the cake into a ridge in the middle of the oven and bake for 30-40 minutes until golden brown.
